I’ll probably change my mind every time someone else posts, but I’m going to say Mercedes Lackey. I want to hear how she came up with Valdemar and all the various stories that take place there. Having a gay main character (Vanyel) in The Last Herald-Mage in 1989 seems pretty ground-breaking, but that may be a reflection of what other books I’d read at that point in my life.


Out of genre, Adam Savage. Same reason.
I would love to hang out with Seanan McGuire. She just seems like she's my people, and I would love to hear about her process and how she makes her work representational of all sorts of folks without hitting you over the head with it.
Alternately, Neil Gaiman, because I love his books and I just think he'd be a fascinating conversationalist.
