If two editions are published on the same date, the edition first added with the ISBN keeps it.But sometimes an edition gets a new cover, but the publication date isn't changed. With your example it is quite possible it is a more recent change.
Sometimes Amazon can help with this. If one of the covers is currently listed on Amazon (provided it is an edition sold by Amazon itself, not a third-party vendor), that is considered the most recent one.
The brown/white cover is listed on Amazon https://www.amazon.com/Elmer-Gantry-S... and (as linked above) is also listed on the Signet Classics page as their current title. That all seems to indicate that it is indeed the most current. Thank you!
