If the cover art for an anthology hasn't been uploaded to any of the official publisher/bookseller sites yet, but has been posted on the editor's personal website, is that an acceptable source or should one wait until the publisher/booksellers put it up?

The author's page is an acceptable source, but only if there are enough identifiers to be sure it's the right edition. (Preferably that means the ISBN.)

In that case, I'm guessing the editor's website isn't enough. She only included the title and the release date. I'll wait until the publisher gets around to putting it on their website to start a thread.
