Ok so Katniss has been calling Peeta 'Peeta' for the first part of the passage, but at the end she decides to call him the baker's son instead of by his name. Sometimes this kind of thing is done to prevent repetitiveness, but it would sound just fine with 'him' or 'Peeta' instead of the baker's son. Therefore, I can infer that Katniss is purposely calling him the baker's son in order to mentally and emotionally distance herself from him. Calling someone by their name is much more intimate than by their relation to a person you trade with. As hard as it is for her, Katniss is trying to separate herself mentally from Peeta, and it shows through in this tiny wording choice.
