I read A Street Cat Named Bob: How One Man and His Cat Found Hope on the Streets by James Bowen for this, and it was just a generally heartwarming read about a man and a cat, both down on their luck, who find each other and make the other's life better thereby. Glad I read it.

i just finished Peaces by Helen Oyeyemi, and the plot features two beloved mongooses who don't die. I didn't love it as much as her previous novels so I was glad I could count it for this challenge :)
I read Escape from Aleppo for the Reading Women prompt A Middle Grade Muslim Novel, and was happy to discover the main character has a pet cat that comes along as she flees the city during the Syrian Civil War. There's a lot of difficult things in the book, but pet death isn't one of them. The cat is happily still alive (and with his person) when the book ends. They even save the donkey!
The book I'm currently reading, The House in the Cerulean Sea counts. The protagonist has a pet cat who survives the whole book.I think it could also count as 7: a fat positive romance. The protagonist is a self-described larger man.

My reddit Books Santa sent me a number of books to complete my Book Riot challenges. For this prompt, she sent me See You in the Cosmos and I could not recommend it more!
Black Beauty is a rather unconventional suggestion I have for this, but I’m suggesting it because the story—though painful before the end—is so beautiful and makes extremely important observations about horse-owner relationships and the bonds that horses carry for a lifetime (a horse can recognize you even if it’s been 20 years!). There is animal cruelty but the end is worth the journey, and even the journey has its… well, beauty. Misty of Chincoteague, and Spirit are also amazing. And a non-horse book hmmm how about the one about raising a bunch of Canada Geese and then helping them learn to fly? I think that one has a happy ending too, right? Not just the movie version.
I think kids’ books count too, so stuff like Clifford or Curious George would make good picks if you feel like revisiting your childhood.
I finished this one by accident. I did a thing at my library where they picked out some books for me, one of which was Rusty Puppy. The dog is definitely well loved and is around quite a bit and does not die, so I will be using it here.
I read The Bangover by Lili Valente. It's a decent enough romance that hit the spot. It also has a beloved pet cat named Murder.

I think The Travelling Cat Chronicles should count for this - the cat is super beloved and is alive until the very end. This should count for the "non-european novel in translation" too!
