Quarantine Tuesday Reading Kaffeeklatsch - 10/20/2020

The Sr. Manager (who would be my boss's boss's boss) said that he was intimidated by my contracting knowledge. The Sr. Manager who performed my technical interview said that they've never interviewed anyone with was much relevant knowledge for the team. The Hiring Manager told me it was obvious that I had done my homework and I was well prepared and if I answered all of the questions as I did for him, then I should have no problem. I really, really like the guy that I would be working the most with, he was hilarious and so similar to me in personality, I know that I would have fun with him.
And now I will rest lol
I had an interview on Friday with another company that went well and I plan on emailing them to follow up on Friday if I haven't heard anything by then!
So many good things! This has been such a long journey, it's hard to believe that it seems to be finally coming to an end!!!
When I met with the Amazon recruiter last week, she told me that she would reach out on Thursday afternoon, I'll update everyone as soon as I hear from her!

Miss Lola is cone free, once again. How long it lasts this time, that is the question. The wound looks good though- I awoke to find her sleeping at my feet this morning, which has not happened in a long time, as she wasn't able to make the jump to the bed. I am assuming she did not want anyone to know, if she did not make it-so she planned her jump for late night...need a nanny-cam to keep an eye this foolish dog.

I miss having a Polish deli/grocery nearby!! I think there is one here at the cultural center but it is so far away. When I was in FL I had a runner, Polish friend that would include making Pierogies for me whenever she made them. I tried my hand at making them over the summer and they were delightful! I will definitely be trying again periodically. I'm not Polish... it's one of the only European nationalities that I'm not! I call myself an American mutt, I think I traced my heritage back to 6 or 7 different originating countries. Anyway.. I did a study abroad in Czech and Poland... Krakow specifically and I fell in LOVE with the food!!

Well...we bought Potato and Chedder, Potato/Bacon, Sweet Cheese, and Sauerkraut and Mushroom Pierogi-there are between 12 and 15 in each package. We also bought City Chicken( which has been eaten already, but not as good as I remember my Moms). Got two large links of smoked sausage and a loaf of strawberry/cream cheese bread (which I am inhaling some as I type-yummy!)
@ Holly, I love to cook and I cook a lot of the Polish foods-stuffed cabbage, Kapusta, Beigos-(all of those are made with cabbage)
Christmas cookies are big thing around here too.
@Robin, my husband was born in Poland, My father was Polish and so this household respects and devours the heritage -LoL

Tonight (Wednesday Oct 21), we're having a delayed Anniversary celebration. We were going to do it on the 13th - the actual anniversary date, but then I came down with the eye infection and Hubby had a cold. (Yes, just a cold...)
Just one friend coming over for dinner. It's been so long since we've hosted any sort of dinner party, we're like chickens with our heads cut off. Vacuumed, dusted, polished silver, washed the crystal glasses and the good china. Now I realize I don't have any candles ... off to the store for the candles and to pick up the floral arrangement.

@Charlotte, How exciting for you! It's your time! It looks like you will have your pick of jobs.

For anyone with a Korean restaurant- go try some kimchi mandu.


Some Costco's actually have premade bulgogi in their house-made section- by the cocktail shrimp and pasta dishes. It's super easy to make a home to. If you like it spicy, make sure to request some gochujang (red pepper paste) from the restaurant to add.
It could have also have been bo ssam or shabu shabu both of which are EXTREMELY thin cut beef.

Anyway the ones we always had and the ones I liked were simply filled with cottage cheese. Hard to find here. The only place I've seen them is via a vendor at a Christmas market.

You sure it was not Farmer's Cheese? Those are the ones I love-but they are more expensive, because of the cost of the cheese

@Joanne - bulgogi is often available at any of the Korean restaurants selling wings -- if you have a Bouchon chain nearby, their bulgogi is particularly delicious. Hmmm, I think I'm ordering that for dinner - delivery from local place!
On theme of Polish restaurants, NYC has some really esteemed ones that have been here for generations, as of course, NY and NJ have large eastern european immigrant populations. My favorites were in the East Village. One of the most beloved by all did not survive COVID shutdown....and we are all in mourning. It fell on the heels of another noted Polish restaurant, located in Brooklyn Heights, Teresa's, closing permanently in 2019. Sadly, immigration has of course shifted and the younger generations are all declaring themselves vegan and paleo and whatever, which of course Polish cuisine (or many for that matter) fits into.
Sad to see it go. But there are still wonderful places in NJ...

You probably have different brands. I've found that there is a brand (or used to be, anyway) that could be found in Saskatchewan that I couldn't find here in Alberta that had the cottage cheese ones.

All the talk of Polish food has made me hungry!! When I made the pierogies from scratch I also make them low FODMAP/mostly vegan and they still tasted wonderful. I'm going to have to have a Polish night soon and I'm going to need to make my way to the Polish cultural center soon.
Today is the day that I should receive my offer from Amazon (see that positivity!!!) I'll let everyone know as soon as I hear! It should be this afternoon as the interviewers are meeting this AM to debrief on my interview panel and decide.

How do you make your dough Joy? We use just flour water and salt-Adam's Mom and sister insist this all you need.

The dough was unbleached all purpose flour, salt, and 1 egg (ok... so I lied, not vegan but lactose free and low FODMAP).
I went with a mashed potato (with almond milk and vegan/soy free butter) and cheddar cheese filling.

YAY! Congratulations!

**edit** and I am reminded how grateful I am I never have to apply for a job again since I retired 2 years ago!

Work has been even more stressful than usual fighting with banks, who keep making getting mortgage commitments harder and harder. But today some of this frustrating logjam broke apart and clients finally got their mortgage commitments and we can close.
Want to check in on Charlotte as her employment journey is something I seem to be vicariously vested in.
And ditto Amy...how goes the teaching?
