Theresa | 15664 comments Good evening all!

Work has been even more stressful than usual fighting with banks, who keep making getting mortgage commitments harder and harder. But today some of this frustrating logjam broke apart and clients finally got their mortgage commitments and we can close.

Want to check in on Charlotte as her employment journey is something I seem to be vicariously vested in.

And ditto Amy...how goes the teaching?

@Joanne - lets hear how Miss Lola is doing and whether any of the Polish food supplies picked up on Sunday have made it to Tuesday.

14 days...and counting. Need I say more?

Charlotte | 1701 comments Today was THE day! The interview day with Amazon! 5 interviews back to back with a break for lunch, from 9-3!! It was intense but I was incredibly prepared for it and it flew by.

The Sr. Manager (who would be my boss's boss's boss) said that he was intimidated by my contracting knowledge. The Sr. Manager who performed my technical interview said that they've never interviewed anyone with was much relevant knowledge for the team. The Hiring Manager told me it was obvious that I had done my homework and I was well prepared and if I answered all of the questions as I did for him, then I should have no problem. I really, really like the guy that I would be working the most with, he was hilarious and so similar to me in personality, I know that I would have fun with him.

And now I will rest lol

I had an interview on Friday with another company that went well and I plan on emailing them to follow up on Friday if I haven't heard anything by then!

So many good things! This has been such a long journey, it's hard to believe that it seems to be finally coming to an end!!!

When I met with the Amazon recruiter last week, she told me that she would reach out on Thursday afternoon, I'll update everyone as soon as I hear from her!

Thank you all for your support!!!

Robin P | 5809 comments I doubt everyone would have given you all that praise if they didn’t mean it. I hired people at much lower levels and we always tried not to give away when we were super impressed with a candidate. But then we would sometimes call them back with an offer before they left the parking lot.

Really good that you also liked the people you will be working with.

Amy | 12953 comments Just Fabulous Charlotte, and so not surprising.... When something is right, it flows and it works!

message 8: by Joanne (new)

Joanne (joabroda1) | 12651 comments So, so happy for you Charlotte! I know this is going to come together for you-it's your time!

Plenty of Polish supplies were hidden in the freezer as soon as they arrived at home-so no worries there Theresa

Miss Lola is cone free, once again. How long it lasts this time, that is the question. The wound looks good though- I awoke to find her sleeping at my feet this morning, which has not happened in a long time, as she wasn't able to make the jump to the bed. I am assuming she did not want anyone to know, if she did not make it-so she planned her jump for late night...need a nanny-cam to keep an eye this foolish dog.

Charlotte | 1701 comments Thank you all!!

I miss having a Polish deli/grocery nearby!! I think there is one here at the cultural center but it is so far away. When I was in FL I had a runner, Polish friend that would include making Pierogies for me whenever she made them. I tried my hand at making them over the summer and they were delightful! I will definitely be trying again periodically. I'm not Polish... it's one of the only European nationalities that I'm not! I call myself an American mutt, I think I traced my heritage back to 6 or 7 different originating countries. Anyway.. I did a study abroad in Czech and Poland... Krakow specifically and I fell in LOVE with the food!!

@ Joanne - I'm so happy that Lola is doing well!!!

message 10: by Joanne (new)

Joanne (joabroda1) | 12651 comments Oh, Charlotte! Krakow is such a beautiful city! I have been there twice, while visiting my husbands family.

Robin P | 5809 comments When I was a teenager I babysat every week for a neighbor family who were Polish immigrants and sometimes I just went over to play with the kids. They had great food and I even learned to say "Thank you for the meal" in Polish.

Well...we bought Potato and Chedder, Potato/Bacon, Sweet Cheese, and Sauerkraut and Mushroom Pierogi-there are between 12 and 15 in each package. We also bought City Chicken( which has been eaten already, but not as good as I remember my Moms). Got two large links of smoked sausage and a loaf of strawberry/cream cheese bread (which I am inhaling some as I type-yummy!)

@ Holly, I love to cook and I cook a lot of the Polish foods-stuffed cabbage, Kapusta, Beigos-(all of those are made with cabbage)
Christmas cookies are big thing around here too.

@Robin, my husband was born in Poland, My father was Polish and so this household respects and devours the heritage -LoL

=============

Tonight (Wednesday Oct 21), we're having a delayed Anniversary celebration. We were going to do it on the 13th - the actual anniversary date, but then I came down with the eye infection and Hubby had a cold. (Yes, just a cold...)

Just one friend coming over for dinner. It's been so long since we've hosted any sort of dinner party, we're like chickens with our heads cut off. Vacuumed, dusted, polished silver, washed the crystal glasses and the good china. Now I realize I don't have any candles ... off to the store for the candles and to pick up the floral arrangement.

Holly R W | 3141 comments @Joanne, your foods sound delicious! I just tried sweet cheese pierogi this week - they tasted a lot like blintzes. I'm sure that your family loves that you love to cook!

@Charlotte, How exciting for you! It's your time! It looks like you will have your pick of jobs.

@Tessa, Happy Anniversary! I'm glad that you and your husband are feeling better.

To everyone else, I wish you a good week.

Joanne (joabroda1) | 12651 comments @ Tessa - have a wonderful dinner wish I could pop in a SBY -lol

message 19: by Joi (new)

Joi (missjoious) | 3970 comments I'm a BIG dumpling fan- any kind. We have a local bar that does European food, and hubby and I got some potato perogies a couple weeks ago- came with a nice paprika sour cream and mustard sauce. I wish they had options for different fillings though.

For anyone with a Korean restaurant- go try some kimchi mandu.

message 20: by Joanne (new)

Joanne (joabroda1) | 12651 comments @ Joi, I use to know a Mom from the days when the kids were young. She had 2 Korean children and she learned to cook so many great dishes. She use to make this wonderful dish-thinly sliced beef, a bit spicy-I cannot remember the name??? What is it Joi, help me so I can look for a Korean Restaurant to order it ftom!

message 21: by Joi (new)

Joi (missjoious) | 3970 comments @Joanne- it was most likely bulgogi.
Some Costco's actually have premade bulgogi in their house-made section- by the cocktail shrimp and pasta dishes. It's super easy to make a home to. If you like it spicy, make sure to request some gochujang (red pepper paste) from the restaurant to add.

It could have also have been bo ssam or shabu shabu both of which are EXTREMELY thin cut beef.

Joanne (joabroda1) | 12651 comments Oh thanks Joi-nope it was bulgogi~ So good!

message 24: by LibraryCin (new)

LibraryCin | 11722 comments Perogies... Almost every perogy you can buy here has potato. I'm not a fan of the ones with potatoes. Growing up, we sometimes had German verdanicka (spelling?).

Anyway the ones we always had and the ones I liked were simply filled with cottage cheese. Hard to find here. The only place I've seen them is via a vendor at a Christmas market.

You sure it was not Farmer's Cheese? Those are the ones I love-but they are more expensive, because of the cost of the cheese

message 26: by Theresa (new)

Theresa | 15664 comments @Tessa - Happy Anniversary! I can appreciate how you are feeling -- one of my oldest friends, Liz (who also happens to be Polish - I've been sharing Joanne's Polish food adventures with her) and I have a reservation at a favorite historic restaurant in Hell's Kitchen area of Manhattan - Landmark Tavern, for Thanksgiving - they have been unable to do outside dining given the locale and up until end of September were restricted to takeout and delivery. It will be our first inside dining in a restaurant since early March and we've been carefully plotting - reserved specific table in specific section of restaurant, what we plan to wear, etc. We've NEVER planned a dinner so carefully! Also we know the restuarant owner is minding the COVID protocals very strictly.

@Joanne - bulgogi is often available at any of the Korean restaurants selling wings -- if you have a Bouchon chain nearby, their bulgogi is particularly delicious. Hmmm, I think I'm ordering that for dinner - delivery from local place!

On theme of Polish restaurants, NYC has some really esteemed ones that have been here for generations, as of course, NY and NJ have large eastern european immigrant populations. My favorites were in the East Village. One of the most beloved by all did not survive COVID shutdown....and we are all in mourning. It fell on the heels of another noted Polish restaurant, located in Brooklyn Heights, Teresa's, closing permanently in 2019. Sadly, immigration has of course shifted and the younger generations are all declaring themselves vegan and paleo and whatever, which of course Polish cuisine (or many for that matter) fits into.

Sad to see it go. But there are still wonderful places in NJ...

You probably have different brands. I've found that there is a brand (or used to be, anyway) that could be found in Saskatchewan that I couldn't find here in Alberta that had the cottage cheese ones.

Where'd he live in NJ? I lived there until Dec 1989. I lived in Red Bank which is near Freehold/Middletown/Rumson area.

@Tessa - Thank you and Happy Anniversary!!!

All the talk of Polish food has made me hungry!! When I made the pierogies from scratch I also make them low FODMAP/mostly vegan and they still tasted wonderful. I'm going to have to have a Polish night soon and I'm going to need to make my way to the Polish cultural center soon.

Today is the day that I should receive my offer from Amazon (see that positivity!!!) I'll let everyone know as soon as I hear! It should be this afternoon as the interviewers are meeting this AM to debrief on my interview panel and decide.

Not sure where he lived-and he is not around to ask right now.

How do you make your dough Joy? We use just flour water and salt-Adam's Mom and sister insist this all you need.

Keeping the white light of positive energy flowing across the country to you!

The dough was unbleached all purpose flour, salt, and 1 egg (ok... so I lied, not vegan but lactose free and low FODMAP).

I went with a mashed potato (with almond milk and vegan/soy free butter) and cheddar cheese filling.

Thank you!!
