We prefer to use Worldcat where possible as they are page numbers added to that database by actual librarians.
I'll check the editions you've listed.
If you own any of these volumes, apart from the German Inkheart Trilogy please advise.

Sanditon and Other Stories, ISBN 9781857152258, 502 pages as per Worldcat, first published to be determined.
Sense and Sensibility, ISBN 9781857150513, 416 pages as per Worldcat However, a GR librarian has that edition and states it is 367 pages, so it stays at 367.
Pride and Prejudice, ISBN 9781857150018, 408p Done as per Book Depository
David Copperfield, ISBN 9781857150315, 1016p (missing)
From many sources page numbers range from 877 to 932, unable to determine exact number unless someone has that edition. For an interim number going with Worldcat 891 pages.
Oliver Twist, ISBN 9781857151107, 428p stays as per Worldcat
Dracula, ISBN 9781841593302, 386p stays as per Worldcat
Frankenstein, ISBN 9781857150629, 234p stays as per Worldcat
other editions:
Lady Windermere's Fan, ASIN B004UJB03S, 56p as per amazon

The Count of Monte Cristo, ISBN 9780141392462, 1276p stays as per Worldcat
Die Tintenherz-Trilogie, ISBN 9783791504889, first published 2011, 2080p (missing) (source: I own this set and counted and added the pages together)
Done, but first published 2008 not 2011. The original publication date is for the earliest published work.
Tintenherz, ISBN 9783833714214, 18p Done
Tintenblut, ISBN 9783833714221, 22p Changed to 23
Tintentod, ISBN 9783833721441, 23p Done

Introductions in Roman numerals should not be included in the page counts on Goodreads. The correct page number is the last page of the book belonging to the text (i.e. excluding previews and adverts).
ETA Also, I own that edition of His Dark Materials and can confirm first-hand that 1102 is the right page count according to Goodreads policy.

re: David Copperfield
I can confirm 891 as being the last page with text (end of afterword).
re: Tintenherz-Trilogie
If I understood that right, then the original year should be 2003 when the first book of the series was published.

Actually, with trilogies and omnibus editions, the original pub year should be the year the last published volume (in this case, #3) was first published.
Example: for an edition containing book 1 (first published 1991), book 2 (first published 1993) and book 3 (first published 1997), the original publication date would be 1997.
