Aelin, which genres are you interested in - e.g., teen or adult, fantasy, romance, horror, etc.?
Inkheart, although Death's character isn't introduced until book three. (Target audience is pre-teen, but I continue to this series as an adult.)The Tales of Beedle the Bard
Almost all of Terry Pratchett's Discworld novels include Death as a character. He's very prominent in several, starting with Mort. MortAlso, though not Discworld, he's in Terry Pratchett's and Neil Gaiman's Good Omens. Good Omens: The Nice and Accurate Prophecies of Agnes Nutter, Witch
Not so well known outside of Denmark, since they are only recently translated, but death is a character in The Devil's Apprentice series by Kenneth B. Andersen.
