The man would always find her after she reincarnates by ”her gold”, which sometimes could be literal gold or other times her hair color. As the title says he is immortal and i’m farily certain this is a pretty old book, around 1970 maybe? I could be totally wrong though. I don’t remember much more . Not sure if they’re soulmates either? But I’m pretty sure they were connected in some way.

Sounds like Merlin's Ring. At the end of the book The Ship from Atlantis, which precedes Merlin's Ring, Corenice tells Gwalchmai he can find her by her "gold"
