Not really sure if this helps but I vaguely remember/think that the title may have had Magician in it. I read it around 2005-2011 and would probably say early 2000s maybe for when it was published. I believe it is set in a world like ours but cant quite remember exactly. I know there is a book after it and I believe one before it.

I know that it is mentioned that Matthew wears a coat that jingles because of metal all over it or something like that. I think gargoyles attack but cant exactly remember. There is a portal near the college that goes to the world of the fae. In that world if you eat or drink without being told it is okay you will be cursed to stay in that world. There are demons in this story one is named Christian.

Wanted to put this here, there is a female character who is in the story that has Endometriosis if that helps narrow it down. Plot ending wise I remember that one of the other male characters and the female I just talked about were trapped as geese by something.

Whiskey and Water by Elizabeth Bear? It's the second book in the Promethean Age series, but the main character in this one seems to be Matthew Szczegielniak, aka Matthew the Magician. The Google Books preview (https://www.google.co.uk/books/editio...) is a bit limited but I did manage to confirm that there is an antagonist called Christian, and Matthew does have a jingling coat like you describe:
