SOLVED. Cant remember title of romance / fantasy book [s]

My sister had a romance / fantasy book (could of been listed in time travel as I don't remember) that I read in early mid 2000's that I cannot for the life of me remember the title (she no longer has the book so she wasn't any help). But I remember the plot and the main female character name, which was Amy. The book was set in modern day England at an old castle that was having a renaissance re-enactment or festival when a 13th or 14th century knight was awaken within the walls of the castle to get a second chance to do a task over again. The female character Amy meets him, thinking he is just another percipient at the festival but soon she realizes he isn't, that he could possibly be from the past. Near the end of the book, the witch who brought him back is in the form of a dragon who is silently sleeping/waiting in the bellows of the castle for the moment to strike the knight and make him fail his final chance at completing his task. The knight ends up killing the witch and he gets to go back to his time to get a second chance at living his life - which he asks Amy if she wants to go with him, which she does and they go back to his time and get married. Other tid bits I remember is, the witch is also from his time and he might of had a fling with her daughter which didn't turn out in their favors which might of resulted in her harming or killing him. I remember when the knight was fighting in the re-enactment festival, he pointed his sword or lance at Amy before the fight took place as in dedicating his win to her. The knight also fought off a man that was bothering her or another woman and he called him a toad. Amy also talked about how she thought people didn't bathe much during his time and he corrected her telling her they did. Amy also asked him questions about King Author too but I believe he told her that was maybe 100 years before his time. Also during the final showdown with the witch, I believe it might of been storming too. Oh and I believe at the end of the book, way everything was worded, there might of been other books related to this one as well if that helps. The cover of the book to best of my knowledge had a castle in the distance with a girl in a white shirt on it - I don't know if that version is still in print or not but that's how I remembered it. Any help in finding the title of the book would be very much appreciated as I would like to read it again if possible.

Kris I'm gonna have to check that one out because that might be it as the plot summery sounds like it plus the lady on the cover has a white shirt like I remembered. :)
