ABANDONED. Fantasy about an unlikely hero, a dragon and a princess

Starts with a boy who meets and kills a mystical animal in the forest then goes off to be a soldier where he befriends a couple of guys. He later on goes to become a powerful individual who later fights his father whom is a conqueror from a different nation. Somewhere there he gets a dragon, falls in love with the princess, has to travel to some far away place to meet his mother. The princess ends up losing her Kingdom and decides to take her subjects to look for a new place and goes to the"empire" which conquered her Kingdom. Somewhere also the dragon gets a mate which later on gives birth to a baby dragon

I read this book about 3 years back. And no I'm not looking for Eragon
