ABANDONED. Fantasy series with male who is from race of warriors who fight demons in dreams?

I read a book series sometime around 2004 or 2005 that started out with a man escaping enslavement. I don't remember if you saw that happen in book or if it started afterwards. I remember he was castrated which became a problem when he returned to his people.

He belongs to a race of people that fought demons in landscapes in peoples dreams (or something like that.) So, there was some sort of magic system in the series.

I also think that there was some sort of war going on having to do with the people that had enslaved the main character. He also had a wife before being enslaved.

The setting for the story is a completely made up world and has no resemblance to the real world.

Oh the series was a trilogy and I remember one of the covers being a man with big (black) wings in a rather white and cracked rock looking landscape.
