Not sure how this applies to pub date, but I would guess that it should be set to the actual publication date of the officially released copy. Otherwise the original pub date would revert to the earlier ARC release date, which is highly misleading and unlikely to be known.
Any other librarians want to weigh in on this?

I would put the original pub date as the official one, and then leave the ARC one blank

how are drafts handled? Some publishers give away free, uncorrected and unrevised editions before the publishing date. These drafts often enough have a different ISBN than the final publication.
eg. ISBN 9783257862270 is the draft edition of the definitive publication with ISBN 9783257068337.
