ABANDONED. Looking for a series of books that have children's short stories like "Stone Soup"

I'm looking for a series of books I read as a child from the late 90s to early 2000s. They were hardcover, thin, large books that had children's short stories in them. The books almost looked like textbooks. I believe that the pages were glossy, the volumes were numbered, the spines were dark pink and the covers were minimalistic illustrations of wildlife and forestry. The covers changed every volume. The only story I can remember being in them was "Stone Soup" and the stories were all illustrated. Please help!!!

I don’t think it’s the same edition but Jim Henson’s The Storyteller definitely has Stone Soup among other stories, it might be a lead!

I remember the stories all being for children but a bit dark. People got eaten by animals, chased by devils/monsters and so on.
