1 medium-size lemon = approximately 1 tablespoon of lemon zest
Three heaping tablespoonfuls of sifted white sugar.

A tablespoonful of sifted flour.

The grated rinds of three lemons.

The white of one egg well beaten; all mixed.

Drop on buttered paper, and bake in a moderate oven.
