I can do 2 at a time, but I need them to be in different formats to avoid getting confused, so usually one physical book and one e-book.

Everybody is a bit different on this. I typically have 3 on the go at all times lately. All in different formats. One audio, one ebook, one hardcopy.
I only read one book at a time. I know I am probably the minority but if I read more than one I just end up being more interested in one and blasting through that one and then I forget everything about the other one so I only read one. If I am not in the mood for it I just put it down and read something else.
I've read up to 5 at a time. I don't find that the plots gets mixed up in my head, but my mood to read something changes really fast, so I just go with it. Lol. Although, I do prefer to read 1 book at a time because it can feel overwhelming for me.
