This book is a bit old, but it should still be a great introduction to the topic. I read it about 30 years ago.

I also think Does God Play Dice?: The New Mathematics of Chaos is a little more specific about the science and mathematics. Gleick seems to stick more to the history and biography, and steers clear of the mathematics.
