Half the editions list co-authors Terry Pratchett first and Neil Gaiman second, while the other half reverse this, such as here: https://www.goodreads.com/book/show/1...

Should the author order be reflected in each individual edition or is there a definitive order they much all adhere to?

All the editions should have the same primary author. What is the order on the first (oldest) editions?

Scott | 9038 comments The U.K. 1st edition has Pratchett first; the U.S. 1st edition has Gaiman first. Both 1990.

The UK edition appears to predate the US version by a couple months.
