Luke definitely! Even from the first episode you could tell they were made for each other. They always had this chemistry between each other.

Chris. I felt like he was really immature. He seemed more like her childish friend which is weird since they had a kid together.
Max. He was so sweet and caring and he really loved Lorelai and Rory. He also loved books!!!! I would like a Max!
I guess Luke since Lorelai cared about him the most. He was the one she called when she needed help. He was the one who helped her raise Rory. He was always there.

For me, the reasoning is found in the core of Lorelai's personality. She was afraid of commitment. I think that she chose to latch onto Christopher because she knew that he would never happen. She could blame him, or at least the idea that they would someday get together (as I believe she did in a season two episode) for sabotaging her other relationships, when really, she was simply afraid of a relationship lasting.
This is also why it took her so long to let herself acknowledge her feelings for Luke. She knew that, as Rory said in Raincoats and Recipes, when she got with Luke, she was going to be WITH Luke. She knew that he was her IT. Deep down, Lorelai knew it. And it scared her.
Also, as for when Luke and Lorelai's relationship went sour in the second half of season 6, I chock that up to ASP trying to sabotage the show. She and her husband had wanted a two-year contract and a few other demands, that were denied them by the network. I think the way Luke started to ignore/not appreciate Lorelai was so extremely out of character for him. He had been completely devoted to Lorelai from day one, and then suddenly he ignores her and keeps secrets from her? They did it to make it more difficult for the new writers and show runners to continue on. For me, Gilmore Girls ended with The Prodigal Daughter Returns, minus the Luke/April storyline introduction. After that, the series imploded.
