Abby Cooper, Psychic Eye in this series, the only PN element is that the MC is a psychic. There is a lot of searching and working to solve the mysteries, it doesn't all come to her "in a flash of light" as it were.
Ghost of a Chance is the first book in another series where the MC is psychic, but there isn't a lot of PN in it. Another mystery series, btw.

What would you define as "too paranormal"?(As a general rule, it's very hard to answer requests based on vague subjective criteria, like "give me a book that will make me cry!" or "something that won't bore me!")
Do you prefer fantasy books for young adults (teens) or older adults? More romance, mystery, action, etc.?
Any Sarah Addison Allen book: Garden Spells, First Frost, Sugar Queen, etc.... They are magical realism. All are independent and read in any order. As far as I can recall, all have a romance involved, along with other issues and relationships that need resolution. It’s mostly real life with little magical happenings. A magic apple tree or a garden that can change its paths. The Particular Sadness of Lemon Cake by Aimee Bender: A woman who “tastes” the feelings of the person who made her food.
Ebookworm is right, Aimee Bender is the queen of magical realism. My favorites of hers are the collections Willful Creatures and The Color Master: Stories. An Invisible Sign of My Own is good, too.Kevin Wilson is also great; Tunneling to the Center of the Earth: Stories is wonderful. It's also a collection of short stories.
Don of the Dead In this one the MC is a normal person (who works in a cemetery) until hitting her head on a tombstone. Now she sees the ghosts of people in her cemetery who were murdered and sets out to solve the mystery. The ONLY PN elements are the ghost. And, in the books that I read, I only remember 1 ghost at a time.
Heiress for Hire another book by Erin McCarthy has a slight PN element to it. The h lives in a house that is haunted. The ghost does nothing but cry and leave pennies for her. This is a cute, funny story, and is the follow up to Kelgar01's suggestion.
Hidden Gem - This has a few paranormal elements to it. I haven't read it in a while but I don't think it was too paranormal.

The Winter Sea or The Rose Garden by Susanna Kearsley might work. The second is more paranormal than the first.

The Screaming Staircase by the great Jonathan Stroud <3Cool world where everything is still pretty normal since the *incident*. The only difference is that after the *incident*, especially at night, ghosts manifest themselves and if they come into contact with a human it can be deadly. Children are more perceptible to these ghosts than adults so they are recruited by companies to go out at night to exorcise ghost happenings.
I'm not sure if it's not *that* paranormal because everything else is the same except for the ghosts and the children fighting ghosts, haha. Set in London.
