Edit 2: I am more confident of the Draw 50 series after looking at the airplane book on Amazon because, while the book itself is portrait format, some of the pages are landscape oriented.

I am also looking for a book with mystical, mythical, magical creatures in it, I forgot what it w66as, but there were some amazing illustrations, one was a werefox/witch and some of the other illustrations were so amazing they burned into my memory. my teacher wouldn't let us even touch the book itself, she would just flip to a page we wanted her to stop on and she'd bring it to our desk and hold it there for a couple seconds... ffff started my love for fantasy artists.

-The book had all sorts of creatures, like Frankenstein, the Hydra, the Echidna, Chupacabra, Chimera, etc. It wasn't just limited to Greek mythological creatures, but there were many creatures from Greek mythology.
-Each entry was broken up with step-by-step drawings.
-I believe the book was formatted in "landscape" orientation.
-I used this book in the late 1990s or very, very early 2000s, so the publication date may be from this time period or earlier.
-I also think this book was part of a larger series, including one drawing book in the same format about cars and jets (I specifically remember the SR-71 Blackbird).
-I might be wrong about this, but I think the entries were organized in order of difficulty. I could be misremembering this detail, but it sticks out to me.
-After searching online for several days, this is the most similar-type book I've found. But, it was published in 2007:
