jaxnsmom | 8341 comments I'd love to get some recipes, especially easy to make ones. I love cooking, but it's just not worth it for one person (unless it freezes well, or is so good I devour the whole thing which kind of defeats the purpose) :~)

Delmy  (needfulreads) Vegetarian times.com is excellent, I use a lot of their recipes. I don't have high blood sugar but I have a lot of relatives that do, so I try to be on the safe side. Truth is though a lot of the time is just reading contents in the foods you eat, even the condiments you use. Like 1g of sugar is the equivalent of 1tsp.

I also have to watch my sodium intake so I tend to read the contents if the products I but like a hawk. A good Nutrition book is always EXTREMELY helpful, if you can find a textbook even better, sorry if this is long but hope it helps(?)

Laura (apenandzen) | 3364 comments I just realized my recipes are also gluten free. Not sure if that'd work for you (but going GF is a great way to regulate your blood sugar, I hear).

What kinda recipes are you looking for, J'mom?

Two that come to mind right now are a brownie recipe and a recipe for breakfast bread. Both are primarily made with almond butter. I've never tried freezing the brownies, but I'm sure they'd do fine. I know the breakfast bread freezes great. I've modified both so that they're sweetened with only ripe bananas.

The breakfast bread is, for me, a complete breakfast, and the brownies are also very filling. Two of them together make a great, fast replacement meal on the go. Could make a great breakfast! :). Let me know if you're interested! Or if you're looking for something else specific, let me know.

First up, we found a great way to go was understanding Glycemic Index. That's how quickly your body turns food into sugar. High is bad for your blood sugar, low is, well you get it. And it's not as straight forward as you would think! Jasmine rice (104 GI) for example is worse than white sugar (100 GI)! A good book to check out if you can is The New Glucose Revolution just for the GI chart. Recipes in the back too. Our government science body released a great cookbook on low GI as well CSIRO Total Wellbeing Diet Fast & Fresh Recipes

Interestingly enough, she's the one who taught me about using zucchini as pasta. Use a veggie peeler to make long thin strips of zucchini, warm it for a few minutes in a pan with olive oil and salt and pepper, then use as pasta. Yum! And brussel sprouts that don't taste gross (that's the name of the recipe).

I have been making sure I cook with lots of veggies lately (meat/fish with lots of veggies or mixed up as a salad fills you up a lot). The other thing I have been doing is using lentils or chickpeas in salads. I use tins as I am lazy, but rinse them with boiling water to warm them through, then add them to salads. They fill you up great. Roasted pumpkin, rocket, fetta, chickpeas, peas and pine nuts with balasmic and olive oil...
I wasn't a fan of them at all until I started doing this.

Lastly, one of my go to ones is sliced eggplant (salted, rested, washed then grilled), lamb fillet dry marinated with cumin and coriander, hummus, fetta and greek yoghurt. So yummy, and Amanda's around the world reading/cooking inspired.

I have more specifics so yell if you want certain replacements/suggestions.

Tasha Just throwing it out there...try going more raw! A great way to start would be to make a green smoothie (or two) everyday. You may already do that but here is a great book to get you going if you aren't doing it:

Tasha, check http://www.crudessence.com. They seem to have a few of their recipes in English. These guy are great. I got their recipe book for xmas. :)

Rusalka, if you like nomnompaleo, you might try www.elanaspantry.com. She uses zucchini noodles too, and lots of other tricks (such as cauliflower rice, which is really tasty) because she's paleo too, which means she eats grain free.

And I'm walking proof that going (and staying) low carb means you'll never have a weight problem. I could play with 10-20 lbs up and down the scale for the last 15 years or so. Not anymore. Now I have the 'problem' of making sure I don't get any thinner! (But I didn't have that until I got off sugar, admittedly. Going low carb led to weight loss, though. But then I just started eating tons of gluten free desserts, lol.)

Low carb is also the way (drs are saying now) to stay free of inflammation, and to ward off problems such as diabetes, cancer, cholesterol, etc., and autoimmune diseases, which are inflammatory illnesses.

IMO blanched almond flour (which you can buy bulk online) is the way to go if you have a sweet tooth. Sweets made with almonds are very filling, unlike wheat flour, which just makes you want more and more. http://shop.honeyville.com/blanched-a...

Laura, I'd love to see the breakfast bread recipe (brownies too dangerous right now).

I'm going to check out the websites and hopefully try some things. I've gotten so out of cooking, I'll have to ease my way back :)
