David, Good luck on your search but I think you should edit your title/thread and move it to UNSOLVED. You are looking for a specific book not books in general.

I don't think it was this one to be honest, might have just been a common-ish theme to kill someone whose gave you a lift, but looking around the book details the in book artwork looks very different to what I recall. The book I'm thinking of had very dark art because it used a lot of shading. I'll edit that in, but thanks forthe effort :)

Three were your dice playing games and Two of them I've found already, "Way of the Tiger" and "Grailquest" but the third I'm drawing a blank but was similar in structure to these two.
The only thing I can remember clearly were two situations in the book, one where your given the option to kill a fisherman for no good reason I could recall, but you do get to see a picture of the fisherman on the opposite page, but if you do attack him he turns into a demon...... as they do.
And the other had a trap door opening up beneath you, dumping you into a water filled room and you were given the choice to drop your gear to let you tread water. Not dumping your gear made you drown, dumping your gear meant you could tread water for awhile as the water filled up the room, giving you another choice, to climb out or keep treading water.
You can guess what happened if you kept trying to tread water. :)
But can anyone think what that book might have been called?
Now some people have suggested this might have been either a Lone Wolf book or part of the Fighting Fantasy series, but I have my doubts about it. From what I remember of the artwork, it was a different style to Lone Wolf's and something tells me it wasn't a Fighting Fantasy book, but I can't confirm that obviously.
Edit: The book I'm thinking of had very dark art because it used a lot of shading.
