Tough question. There are so many. Here are a few:
The Fall of the House of Dixie: The Civil War and the Social Revolution That Transformed the South
Runaway Slaves: Rebels on the Plantation
Dark Journey: Black Mississippians in the Age of Jim Crow
Slaves in the Family
Roll, Jordan, Roll: The World the Slaves Made
Some of these books I have read in their entirety, while some I have only started but not finished.

It a lesser known book, but I really enjoyed Our Fathers' Fields: A Southern Story, by former University of Georgia professor Jim Kibler.
