They mention at some point in the book that they are undoing how we think. Tsversky and Kahnaman were looking for other psychological biases to undo. I think that's what they were going for.
Spoiler alert. There is a double meaning. As well as the technical explanation above, it also refers to the undoing of the friendship and collaboration between Tsversky and Kahnaman. Kind of sad.
In other words, how were minds changed? What was undone?
