Delicious looking recipes. I'll try to remember to photograph next dishes I cook from this book. Particularly enjoyed the sweet potato & cauliflower rice pilaf, Chana saag, Southwestern Mac & cheese, corn muffins & all the polenta recipes. Dessert recipes are contributed by Isa Chandra Moskowitz of Vegan With A Vengence, Veganomico, etc. the graham crackers are a must for s'mores.

Looks good Don! I'm glad I'm not the only one that forgets an ingredient that I specifically intended to use ;-)
That looks really good - beans and rice make up my favorite dishes. Have you tried Fieldroast Chao for the cheese? I like it better than Daiya.
Chao is expensive here, too. I use it for special occasions. Making my own cheese with so many vegan recipes available now seems like a good idea.

I made a Lentil Soup the other day and I tried carmelizing the onions which made it very tasty. i don't have a pressure cooker yet. Am I missing out on something wonderful?

Cleo - if you decide to get a pressure cooker, the Instant Pot is popular among vegans. There are even vegan cookbooks specifically geared to Instant Pot cooking.
Thanks, Renee. Do you know anything about the nutrient content? Do pressure cookers destroy or preserve more nutrients than other methods of cooking?
