I didn't use to like Davos' chapters. I found them too boring. I recall reading and saying: Who cares??? Also I was wondering why the chapters are not told by Stanis and Martin uses Davos instead. He hasn't played an important role so far. I suspect that he will in the future. He seems like a dormant volcano about to explode...
Lena, you are right about Davos, but I think there's something else as well. Martin never makes POV characters those who know too much. Like Varys or Littlefinger, for example. For some characters it is more interesting to learn the information second hand and I think Stannis is one of those characters. Though I'd love a Stannis chapter, even if it's only one.
I really like Davos. I liked seeing him reflect on what he wanted when he was younger versus when he was older."And I know that a king protects his people, or he is no king at all."
