I'm not sure whether Tallis is keen on wines described as 'chewy' to be honest. He muttered something about it being embarrassing to get the bits caught in your teeth But a fascinating article none the less :-)

Wine might be chewy if the butler has inexpertly removed the cork. In which case he should be dismissed, without a reference, immediately.
