I think that a new year is a good time to try new things. So this month's reading challenge is to try out a new recipe. We have plenty of awesome cookbooks you can check out (they live in non-fiction 641), but you can also find a recipe online. Tell me what you're going to try out, but also let me know if it's any good! Let us know where you found the recipe, so others can try it too. Happy cooking!

p.s. You don't have to read an entire cookbook for this challenge, just a recipe.

Tiffinie Adams | 18 comments I tried a stick of butter rice recipe I found online. Loved it but made some modifications the second time that made it even better.
1 cup brown rice
10 oz can french onion soup
1/2 onion chopped
16oz beef broth
1stick butter (unsalted) sliced
preheat oven to 425
put everything in a glass 8×8 pan cover with foil bake for 30 minutes remove foil and stir then bake another 30 minutes - yummy

I'm cooking a Lamb Roast using a slow cook (not crock pot) method and found two recipes that are kind of tiddley-squat opposite. The first I found in The Food Lab: Better Home Cooking Through Science a cookbook I got from Salt Lake Community College. The other is from a website http://slimpalate.com/slow-roasted-le... .

The Food Lab has you Cooking the roast at 200 and cooking for about 3 hours. Then remove the roast for 30-60 min and raise the temperature to the highest your oven will go and put the roast back in for 10 min, to create a nice crust on the lamb.

The Slim Palate site has you preheat the oven to 450 degrees and the instant your roast is slammed into the oven, (best done with two people, but I'm one and the cats are hopeless for help). But I digress. The instant your roast is slammed into the over and the door rapidly shut, turn the oven down to 325. Cook the roast for about 3 hours. The process of starting off with the high heat is to sear the fat on the top of the roast and create a nice crust.

I'm doing the second one. In-out, oven reheat, in-out is not for this girl!

I found the recipe on the big oven app.
You can find it at big oven.com also. I like this recipe it takes about an hour and 10 minutes from start to finish but most of that is bake time so you can do other stuff while dinner is cooking.

It looked initially like a fail, but rescue efforts succeeded and the lamb was tasty. The error? I goofed on the thermometer reading but I could salvage it by cooking it for another 1 1/2 hours. Glad we didn't have folks over to share the feast!

Leftovers were chopped up and used to make lamb curry (Japanese style curry, not so spicey hot as Indian nor Thai). Yum, yum, yum. The recipe for this came from the S & B Golden Curry box.

Becky | 280 comments I made Hearty Southwest Slow-Cooker Soup, recipe from DASH Diet For Dummies which was really good! I also like the recipes in Mediterranean Diet Cookbook for Dummies.

Becky | 280 comments My daughter and I also made mug cakes from Mug Cakes. My daughter made a chocolate, marshmallow one that she really liked, and I made a spicy banana one for my son, who liked it but said it was too sweet with the addition of maple syrup as a topping.

It was pretty tasty and 3 out of 5 kids ate it. Since the other two are 3 and under, their opinion doesn't count, lol. Therefore I am calling it a success. :)

I left the onions out, because I have one family member who doesn't love them, and used black instead of kidney beans. It was pretty good, especially with BBQ sauce on top, and tortilla chips on the side. I precook a bunch of ground beef and freeze in small portions, so just pulled one out of the freezer. Nice meal for a busy day. The recipe suggests cooking for 7-8 hours, but mine was getting a little crispy on the edges after 6 hours.

Carolyn (justknitting) | 137 comments I did things differently from everyone else I guess. I read Willow and Sage Magazine and made the miracle healing balm. I is very nice and works amazing on my extra dry cracked hands!

Jackie (jackie123) | 263 comments I have tried a few new recipes this month, but my family's favorite was a crock pot chicken noodle soup found here: countryoutfitter.life

I didn't put the noodles in the crock pot, just boiled them separately and added them at the end. I dislike soggy noodles...My problem with giving someone a recipe that I have tried is that I usually change it up, and then I don't record measurements, so I can't really repeat it. It drives my hubby bonkers. Meatloaf is always an adventure at our house!

My Grandma was like that, couldn't get a straight recipe out of her because she would just throw in what was on hand. (I still think she made the best soups.)

I made this recipe, Potato Soup, but substituted the bacon for ham, because I had ham on hand. It was DELICIOUS you guys.

Tammy | 13 comments I borrowed the Microwave Mug Cakes cook book from library. There are quite a few different titles. Mine was titled something like 100 mug cakes. Since the cakes are made in two mugs, the dough is not made with electric beaters. They do require self rising flower or buttermilk and soda. Each recipe makes two cakes so the dough fills two mugs. I really liked the fact that the cakes I made were delicious, fast to make in microwave and easy to clean up.
