She is described as being one of the most beautiful women some of the male characters have ever seen, as one of the most beautiful women in England, and possessing a fragile loveliness in addition to being a model lady. I don't understand why there would be any doubt of Ross' attraction. The intensified appeal of forbidden fruit would make it more so.
In these omitted passages I find her more human, relatable and therefore more sympathetic. This has increased my enjoyment of the show and the books since now I know what's behind "the looks" and in between the lines.
