I remember the book was big and it had several unusual fairy tale stories. One was about a Chinese maiden who was in love with this man but they couldn't be together as she was a sky maiden and weaves the sky, in the end her father, lord of the sky, built a bridge so they could meet once a year. Another story was a girl or princess who wanted a unicorn more than anything and tried to trap one. I forgot the rest

I don't know the collection you're talking about, but that Chinese tale is The Weaver Girl and the Cowherd (and there are also Japanese & Korean variants). Maybe that could help?
