SOLVED. Fantasy series where world changes every day - one day it is a desert, the next a jungle [s]

This is a series of books I read as I kid I can't remember the name of. My memory is very hazy, but it is something like there is a world where one day everything is covered by jungle, the next day everything rots away and turns to desert, and then there might be a third day in this cycle (intense rain and floods?) that then repeats over and over. Also, I THINK that the sun changes colour every day of the cycle.

Needless to say, this world is very unpleasant to live in, and there are refuges where people live (underground maybe?) to avoid all this chaos.

Also, I think one of the main characters is a giant.

I swear I am not crazy and that these books actually exist.

Is this the second series of the Thomas Covenant books by Stephen Donaldson? It must be twenty years since I read them, but it sounds like The Wounded Land, I think it was called.
