I started reading a book in high school (around 99') about a knight or warrior that washes up on the shore of an island where it is custom to eat the bodies of the dead. The dying knight's last wish is for someone to save the sorceress. Because of their culture the man who heard his last wish has to fulfill it and goes out on a quest to save this woman. I know he rides a rabbit that somehow goes from giant to normal rabbit sized at some point, and they have a battle with green men that I think may actually be grasshoppers. I wasn't able to finish this book because someone stole my backpack. The title of the book is one word, maybe a name? I have been trying to remember the name of the book but it won't come to me and I've been looking for it for years. help!

Ok so only some details fit as far as I remember, mainly the warrior washed up on a shore of a cannibalistic people and the honoring the last wish part, but this series, that starts with Carnivores of Light and Darkness by Alan Dean Foster might be worth checking.The other two books are
Into the Thinking Kingdoms andA Triumph of Souls
ETA the rabbit bit sounds vaguely familiar but it's been probably a decade since I read them and my memory is fuzzy on the specifics.
For what it's worth (not much I guess if she never comes back) the series I posted before are pretty definitely the right ones, the only bit that she describes that doesn't fit at all is the one-word title. But I just checked my copy of the first book and the giant rabbits that later shrink to small and the green men are in chapter 12 of Carnivores of Light and Darkness.
