I have two, that I like. Betty Crocker's Vegetarian Cooking, and Better Homes and Gardens Vegetarian Cooking For Today. Both books have easy delicious recipes.
The Angelica Kitchen and Candle Cafe cookbooks are pretty darn good, but I think they may be surpassed by Lauren Ulm's new cookbook, Vegan Yum Yum. Delicious!!

I've never had a bad recipe out of The Compassionate Cook book, and the Uncheese cookbook has some really delicious sauces and spreads.
I found the Linda McCartney vegetarian cookbooks to be amazing. Easy to follow and very tasty recipes that I have often used, and importantly (speaking as not the best cook in the world) been very happy with the final product!
I just get stuff off peta.com and vegweb.com :( im broke and haven't found any good good deals on cookbooks.

Any truly good Italian cookbook has many wonderful ideas for veggies as well as delicious risotto, pasta, gnocchi, polenta and bean dishes and those are major standby's for me.
Finally, a lifelong favorite has been a book called "Claire's Corner Copia Cookbook" - it's from a small vegetarian restaurant in New Haven, CT and still has some of the best recipes I've ever used - delicious, easy and straightforward. This would have to be the one book I wished for if I were stranded on a desert island!
