That's why the book is fiction... hahaIf the world is about to come to an end I wouldn't trust a teenager to stop it, let alone the Vatican. The Vatican can't help but meddle with everything, and they even have the excuse of being need to exorcise people. I guess the plot would be more confusing, but there's no way they would limit themselves to observe the end of the world.

Definitely, they would do more than observe. But just because she says she's just there to observe doesn't mean she doesn't have instructions to act if needed.

And it's not like they couldn't see in the sky or in the possessed people that the end was coming. Maybe they were all protecting St. Peter's Square ;)
