Alisa This is the first one that comes to mind. Desire Unchained (Demonica, #2) by Larissa Ione I know there are more. Let me give it some thought.

There was a book I read around the time I started with GR and it was something like Mouth of the Wolf or The Werewolf mouth...arg I cannot find it on my list - anyway it is about a guy who gets bitten and then he is captured but people who are bitten don't live- anyway it was a decent read

Then there is Kitty Norville she is bitten when the story begins but in the third book a side character is bitten and you see the experience over the rest of the series

There is also Bitten by Kelley Armstrong and there is a part in the book that deals with her being bitten.

Sorry I cannot think of more...it feels like my old sci-fi horror days.

Magic Slays has a character bitten by a werecat and the transformation process is shown.

I think Alpha & Omega by Patricia Briggs details Anna's attack and transformation.

Mercy Blade and a short story found in Cat Tales deals with Rick's attack.

You are correct each book has a different narrator - sometimes one narrator will have the same book for example: Elena is a wolf and I think she is the narrator in like four books (Bitten, Stolen, Frostbitten and Broken) but the characters appear in each others book if that makes sense.
