I don't have the definitive answer but in this case (not in most cases) I'd say no. I'm going by the cover and the fact that I've always heard these books as by one author. I could be completely wrong here so I suggest waiting for other librarians to weigh in.
They certainly can be. We have started listing all anthology authors (as people add them), even when they are not all on the cover.
Certainly the primary author should be listed as editor (which I fixed).

Anyone aside from the primary editor is optional, really, but there's no harm in adding more contributing authors if you have the information to hand.
Okay- thanks everyone- I was leaning towards yes myself because I've seen a lot of the same thing being added but since I hadn't actually done it myself I didn't want to assume. I figured I'd ask while I have the book on hand. I'll go ahead and do it- thanks!
One more question- well, actually two more. :) The editors are listed in the book as contributing editors and we don't have that option unless I type it in. I used just 'editor'- is that okay or should I put the 'contributing' there also?
My other question is the actual contributing authors- I didn't meantion this but they aren't actually listed as authors in/on the book. They have their names (in some cases nickames or initials) in the tabel of contents and in the back and on each of their own chapters. Should I add all of them? Only the ones with real names? None of them since they aren't listed?
I guess that's a little more than two questions but it was unintentional I swear!
For authors, if they aren't listed as real names or pen names but are instead given initials in order to be somewhat anonymous, I would not list those as authors -- the point of listing a name in the author field is that that field is searchable and collects a profile containing all of that author's works, which means that anonymous initials don't actually add anything. If most of the names aren't real or pen names, you might want to just put the table of contents in the description instead. For contributing editors, I have been using "Editor/Contributor" as the role since it's not a variation of the editor role but actually two roles, editor and also contributor.

and the author is listed correctly but inside the book are 9 contributing editors not to mention the actual contributing authors whose entries were used. Should any of these or all of these people be listed?
