I seriously think that Katniss should've ended up with Gale, not Peeta

Katniss and Gale didn't like each other from the start. It took quite a while for them to trust each other. It was a mutual need that brought them together - he taught her snares in exchange for a bow.
Katniss did like Peeta from the start - she didn't like feeling beholden to him though.
I can't imagine Gale happy to share Katniss's exile in District 12 with her problems with PTSD. Gale loved the military life. I think he found his niche and no one need feel sorry for him.

The only problem i have with that is that Katniss faked that she liked Peeta for so long and so even though Katniss said it's real that she loved him, how do we know she didn't just trick her brain into loving Peeta.

I don't know how you trick your brain into doing such a thing. But assuming you can, I don't see any evidence of Katniss trying to persuade herself to. She never tries to love Peeta. She does so in spite of herself. It doesn't fit her plan of no romantic love, marriage etc. In fact, her enforced romance with Peeta tends to make her more reluctant. He becomes associated with the Captiol's plans for her. Remember when Katniss chooses Gale and the rebellion after he's whipped? Peeta is rejected in that moment as being associated with the Capitol.
Before Katniss and Peeta have to continue their romance for the Victory tour, there's signs from Katniss that she's at least in the beginning stages of loving him. The kiss in the cave (response not faked), her distress when he doesn't answer her whistle and when his life is in the balance immediately after the Games. That she says she's dreading letting go of the hand of the boy with the bread. All before she knows that the romance will have to be kept up indefinitely.

I think there's two ways to look at the scenario, one of which is that she loved Peeta in spite of herself and the other is that she tricked herself into loving him.
There's a saying that's like "If you fake something long enough, eventually you'll start to believe it" (or something like that), and I might be wrong, it just seemed way too convenient that Katniss and Peeta ended up together after she pretended to love him for a good part of the series.
Also since most of their relationship was built on this fake image they had to show to the Capitol, I have a hard time believing that they really loved each other all along.

They had a history preceding the Games. For Peeta, it was from the age of 5. For Katniss, it is was 11. That incident was a very significant moment for Katniss. He became the 'boy with the bread' and they were both very much aware of each other. Katniss admits to keeping tabs on him. Before they entered the arena and the star-crossed lovers scenario, they were growing closer. Katniss tried to put up a wall because kind people had a way of entering her heart and taking root there.
So there's a sense of destiny even before they enter the arena.
I think the saying is that 'if you TELL yourself something long enough, eventually you'll start to believe it' (self-talk). Katniss never told herself she loved Peeta. She did the opposite - she was afraid to be in love and didn't verbalise it until long into their relationship.
