If they are only available together (so one record only) but the 2 covers are slightly different (same image, just "Volume 1" in one and "Volume 2" in the other), which one is to choose? Can we use the "additional images" feature?

I have also the option of uploading an image of the 2 volumes together https://www.goodreads.com/photo/user/... but I personally find it a bad solution. (I would choose to upload just the Volume 1 image.)

No, this is explicitly not for covers. And adding both covers as a single image is probably best.
