Ðɑηηɑ's recommendation reminds my Tiny Brain of a book I first bought in 1966 at the British Museum, Digging Up Bones: The Excavation, Treatment, and Study of Human Skeletal Remains, by Donald R. Brothwell. There are later editions; I now have the 1981 version. It's nicely accompanied by the photographic guide, The Human Bone Manual, by White and Folkens.
