I love Sir Patrick in almost anything but I can't picture him as a charismatic boozer. How about a Peter O'Toole type instead?
Also, a quick bit of googling says that Henry Cavill is more than a head taller than Chiklis (and Radcliffe). The camerawork on the fight scene would be tricky ;)

Gary I don't have a specific casting idea, but in my head both the male and female dragonriders have always looked like tall, ectomorphic jockeys. Thin, but athletically muscled from the demands of riding. They'd not be terribly concerned about their weight as dragons are stronger than horses, but it would be an issue for the lighter (green or blue) dragons, and the physical requirements of riding would tend to keep them trim.

McCaffrey keeps mentioning Lessa's height, which makes it sound not only like she's short, but that that is unusual for dragonriders.

Holders and guilders could look like just about anything. I love the idea of Michael Chiklis as Fax. I would not have gone that direction myself, as I picture him as a more medieval baron, so long hair seems apt. However, it's a great idea.
