I haven't read the last three books in this series for 4 years now, and literally remember nothing from them except that Sapphire's Eragon's dragon, and Arya was an elf-thing that he had a crush on (I mean no offense, my memory's just that bad). So would I have to re-read those books to understand/enjoy the last book, or could I just start reading it. If I have to re-read it, I think I might just give up on this series...

There are lots of things in the previous books that are really important. If you dont want to reafd them than you just look up what happened in the first three books on Wikipedia or something.
I read them over a period of probably 10 years because there was such a long time between each coming out. I never reread any. Paolini always has very nice summaries of important events at the beginning of the book, so I wouldn't worry about rereading them.
