Michelle (ingenting) I got this recipe from a friend, and it serves 4-6 people.


1 bunch broccoli (approx 2 lg. stems)
1 cup raisins
1 cup red bell pepper, chopped small
1 cup peanuts
1 cup mushrooms, chopped small
1 medium onion, diced
1 lb. bacon, fried & crumbled (I don't use this much bacon, but it's up to you)
1 cup mayonaise
3 tablespoons sugar
2 tablespoons vinegar


Mix everything except the peanuts and bacon in a large bowl. Just before serving, add peanuts and bacon.

Valerie I have a really similar recipe... but instead of using raisins, peppers, peanuts and mushrooms, mine uses red onion (1/2 cup) and sunflower seeds (about 1/4 cup). We also substitute turkey bacon and only use five or six slices.

During the summertime when we can get our broccoli from the farmer's market, I'd rather eat this "salad" than ice cream :)
