I found this recipe on the website www.koshercooking.com after I was invited to a Seder dinner. I thought it was a great side dish, so I like to make it for any occasion.
INGREDIENTS:
1 pint cottage cheese 3 eggs, beaten 3 tablespoons flour (for Pesach substitute matzo meal) 1/4 lb. cheddar cheese, cubed (I like cheese so I use about 1/2 lb.) 1/2 package frozen chopped spinach (I use the whole package) 2-3 tablespoons of butter dash of salt
PREPARATION: Mix together cottage cheese, eggs and flour. Add cheddar cheese. Allow spinach to thaw until it can be broken apart in chunks. Add frozen chunks to the mixture. Cut butter into pieces and combine with mixture. Add salt. Bake uncovered at 350 degrees for 1 hour.
