What you want for lamingtons, is a good sponge cake recipe. If you have one already you know that works, then just use that one. Cut into squares, dip into a chocolate sauce (not icing, you want it to soak in a bit through the outside of the sponge) and then roll in coconut.
I don't really make them as not a huge fan of sponge cake, but the more chocolate that soaks in, the yummier. I had a look at the online place I get a lot of recipes, and they have some super fancy ones! http://www.sbs.com.au/food/recipes/se...
Oh. And I wouldn't use that sauce in your recipe. I'd melt down a whole heap of chocolate and add cream/milk to make a chocolate sauce. My god. My pancreas is screaming and my teeth are recoiling reading that recipe!!! Might as well say "buy one bag of sugar. get spoon. consume."

I remember those days with my daughter although it still happens at times. She would meet a little girl for even just a few minutes and they were now good friends. It's so cute. She's older now (9yo) and realizes that maybe those new 'friends' are more like acquaintances. haha

I remember when we bought our first house although we only lived in it for a few years.
I am still living in our 2nd one. I even re-financed it to buy out my ex-husband. I am on the verge of finally having the mortgage paid off in a couple of months.

I'm fine. Thanks for asking. My mom is coming to visit in a few days, so I'm trying to focus on that. But yes, in the overall today was a better day. As Tasha said I'll always feel a loss, but the thing now is being able to move on.

The biggest frustration is actually coming home from a stressful meeting and having my 81 year old mother, who lives with me, give me a hard time about it. If ever there was a time when I just needed some gentle acceptance.

Whatever it is, Lynda, good luck. I don't know that I have ever received "gentle acceptance" from either of my parents, so good luck with that. Give it to yourself. :)



The problem with that whole situation stems from the fact that my mother-in-law suffered from paranoid schizophrenia. When the house was deeded, she was in a good place mentally and still had a relationship with all of her children. Just a couple of years later my husband was being raised by his sister and there was little to no contact with their mother. They tried to get her help but she refused. By the time he was an adult and began helping his mother, there was no way she would have willingly signed any type of paperwork due to her paranoia. She always thought people were out to take her money or use her name and she had no trust for her daughter. She didn't even remember that the house would legally become her daughter's upon death. As far as she was concerned she owned about 20 acres around her house and the people that lived on that land were supposed to be paying her rent. Trying to get her to change the deed before her death would have opened a whole can of worms that my husband wasn't interested in dealing with. And he has always trusted his sister explicitly. But now we are becoming a little concerned.

Thanks, Rusalka. I bookmarked both pages. Do you know if strawberry gelatin crystals are basically like American Jello? I'm going to see if I can get it at the same place I get all of my British stuff like malt vinegar, Bird's Custard powder, clotted cream, etc.

I have a Nook Tablet and love it. I wonder if you have one of the first editions or something.

Yeah, I would use jelly crystals which are a box of powder you add hot water to and put in a mould/bowl, put in a fridge and it makes what you guys call "jello".

I have a Nook Tablet too. Samsung Galaxy (SM-T230NU). I love it and have learned so much. It is Android and I had a hard time at first, but it got easier. I use it to read ebooks from the library, and of course Nook books. I use my iPod Touch for audio books, but I could also listen to audio books on my tablet. I have the Kindle App loaded. I have been a Nook user since the original Nook Classic came out. Mine still works and I actually like some if its functions better. I have a couple Nook easy Readers too (we share them with other family members). My daughter had the original Nook Color tablet. Worked fine, but the cable was crap and always breaking. She still uses it occasionally. It was great for her son with the kids books. She has an iPod mini and has the best of both worlds now - Nook and Kindle Apps plus everything iTunes.

Sounds like a wonderful organization, Joan! It's wonderful that you get to help out there as well.

Not that I know of, but I don't know how you make "jello". That's how we make jelly, and I assume it's the same, but that has caught me out before. Thought I should explain the whole process in case it's called something else and that's what you would need.
By the way, no one likes the red ones. Just fyi. YOu always go chocolate.
