SOLVED. SciFi [Anthology]--gators become dragons and miniature planet. [s]

I'm looking for an anthology I once read (1970's), or else at least these specific stories that were in it. The first that I remember was about a scientist who discovered that all alligators (or crocs?) had a hole in their hearts; if it was repaired they kept growing indefinitely and became dragons. The second is one in which a scientist starts evolution on a miniature model planet in a tank and it accelerates--the tiny people who eventually grow become more advanced than us and build a force field that prevents the scientist from seeing what they are doing.
I don't know if the book was marketed for adults or teens--can't remember which section of the library it came from, but there was no YA section back then anyway!
