I actually do not like to cook or bake!
But I love cookbooks! I guess it just makes it more fun.
I also love to read fiction about cafe's, coffee chops, diners, bakeries, etc.




I think I'm getting better. At least my wife is honest about the successes and the failures.
Hi David, Welcome to the group! Don't worry, I'm sure we've all had less than appetizing results here and there...I know I have!

I looked over the introductions initially so I figured I'd introduce myself. I'm Amanda, been friends with Jen for years and like some of you my husband does the bulk of the cooking and baking (thanks to his mom's recipes). I'm a great taste tester :) I'm enjoying reading all the comments and cooking/baking ideas. Hopefully I can share some of our recipes and someone else can enjoy them too.

I've been cooking and baking just about all my life. My mother was an excellent baker but,sadly, a horrible cook, so my brothers and I had to defend ourselves.
For the past twelve years, I've been baking and cooking in a wood-fired oven that I built brick by brick. In fact, in good weather (not just yet where I am), the kitchen oven rarely gets used at all. Turned pro ten years ago.
My latest fave is Farinata from Genoa: easy and quick to make and very tasty, plus adaptable. I've got literally tons of bread and savory recipes to share.

The pro part is on the baking side. I like to cook, but two of my brothers are pros on the chef side.
Farinata (called Socca across the border in France) is a bit difficult to classify. There's no rising agent, though, so it can't be called a bread. It's more like a giant pancake or thick crepe. It's quick, easy to make and tasty. I'll post a recipe here or email it if you like.


Farinata, by Mark Bittman, New York Times
1 cup chickpea flour
1 teaspoon sea salt
1 teaspoon, at least, ground black pepper
4 to 6 tablespoons really good olive oil
½ large onion, thinly sliced, optional
1 tablespoon fresh rosemary leaves, chopped, optional
If using, sweat the onion and rosemary in oil first.
1. Heat oven to 450 degrees. Put a well-seasoned or nonstick 12-inch pizza pan or cast-iron skillet in oven (or line a cake pan with oiled parchment). Sift chickpea flour into a bowl; add salt and pepper; then slowly add 1 cup lukewarm water, whisk or use an immersion blender to eliminate lumps. Stir in 2 tablespoons olive oil. Cover, and let sit while oven heats, or as long as 12 hours. Batter should be about the consistency of heavy cream.
2. If using onion and rosemary, stir them into batter. Pour 2 tablespoons oil into heated pan, and swirl to cover pan evenly. Pour in batter, and bake 12 to 15 minutes, or until pancake is firm and edges set. Heat broiler, and brush top of farinata with 1 or 2 tablespoons of oil if it looks dry.
3. Set the farinata a few inches away from broiler for a few minutes, just long enough to brown it spottily. Cut it into wedges, and serve hot, or at least warm.
Yield: 4 to 6 appetizer servings.

I always love finding other shiba people because most will look at you strange when you say what breed they are lol.

I just checked him out. So cute! I love the breed but they can be so stubborn. We get the same reaction when someone asks what breed of dog they are..."a shiba inu" is met with a blank stare and sometimes "a whata whata???"

Haha yeah I get the blank stare a lot too. And they are definitely stubborn!! And I swear Kirby has selective hearing.
Although he does listen to me a lot more than my husband hehe. We take him out to our fenced yard through the basement and some days hubs can call for him for a few minutes before kirb will finally decide to come back upstairs. He always follows me upstairs with no problems. Lol.
