Alias Reader (aliasreader) | 29883 comments :)

I don't know about Cheetos but I tried a new chip today. It's not a health food, but if you are going to snack the calories are not too bad. I especially liked that they had zero sat fat.

Nabisco Wheat Thins Popped- I got the sour cream and onion flavor.

They were so could I almost ate the whole bag !

Alias Reader (aliasreader) | 29883 comments I love chia seeds. I usually toss a tablespoon in yogurt or on ice-cream.

So this article caught my eye. I have to try this !

14 Chia Seed Pudding Recipes to Beat Your Breakfast Rut

If you're tired of waking up every day to the same scrambled eggs or bowl of Cheerios, it's time for an intervention. Chia seed pudding is proof that breakfast can be not just healthy and delicious but also seriously good looking. This breakfast treat is also simple to put together: combine a quarter cup of chia seeds with one cup of any milk of your choice (we love almond), then mix the ingredients together and pop in the fridge overnight. Come morning, you'll have a fiber-rich breakfast that's also packed with omega-3s (not to mention it's vegan and gluten-free). To make your meal even more delicious, enjoy your pudding with any combination of healthy toppings or mix-ins.

Carol (goodreadscomcarolann) | 686 comments I just bought Chia seeds - tmrw morning I will try it out. It sounds too easy to make.

message 256: by Alias Reader (new)

Alias Reader (aliasreader) | 29883 comments I made some tonight. Though I didn't want to use the ratio given. 1 cup milk to 1/4 cup Chia.

Chia are expensive ! Though I found Trader Joe's has the best price at $5 for 5.3 ounces. Most places are double that.

Anyway, I am trying 1/2 cup soy milk and 3 tsp chia. I'll see what the consistency is tomorrow. If it is okay I will top with some fresh blueberries.

That sounds incredibly easy. Will definitely try it.

Alias Reader (aliasreader) | 29883 comments I tried to make it but it wasn't thick this morning. So I put more chia in. I had used 3 tsp for 1/2 cup. I added two more. Now it seems like too much seeds ! So I added some more milk.

Maybe I need to stir it like this person recommends.
From link below.

"When I’m making a single serving of chia pudding at a time, I usually just stir the cup of liquid and seeds together. I wait a minute or two, then stir again. I stir again five minutes later, and five minutes after that. After that, I just let it sit for an hour or two before enjoying"

This link gives step by step instructions and the ratio of seeds to milk for a single serving.

Sydney (sydney2462) | 4 comments I'm new to Chia seeds but made a very easy 'pudding'

2 1/2 c milk or yogurt or soy milk
1/4 c chia seeds
1/2 t flavoring (your choice)

Mix items and place in refrigerator overnite. Remove and add......

3/4 c chopped berries or raisins
1/2 T honey or agave
dollop of whipped cream
sprinkle of chopped nuts

message 261: by Alias Reader (new)

Alias Reader (aliasreader) | 29883 comments Sydney, I tried the other week to make the chia pudding.

I am not sure what I did wrong but the consistency was supposed to be like tapioca pudding. Instead it was more like gelatinous, mucilage like stringy paste. Very unpleasant.

I didn't want to throw it out, as chia is expensive, so over the next few days I added it to my smoothie.

message 262: by Sydney (new)

Sydney (sydney2462) | 4 comments A smoothie will work, lol. I usually don't use milk, I substitute greek yogurt, maybe that's why I get a reasonable result......

message 263: by Alias Reader (new)

Alias Reader (aliasreader) | 29883 comments I love chia in my Greek yogurt. Though I haven't left it in their overnight.

Alias Reader (aliasreader) | 29883 comments I saw this on the internet. I never heard of making pancakes this way. I am intrigued as box pancake mix is pretty high in sodium.

Has anyone made pancakes this way?

Whole-Grain Pancakes

Skip the prepackaged frozen variety and make your own healthy pancakes with ingredients that offer an extra kick to boost school performance: whole grains plus fruits and veggies to help keep your child feeling full and focused. Combine 1/2 cup oats with 1 egg, 4 ounces of puréed carrots, a dash of cinnamon, and 1 tablespoon of honey. These pancakes are sweet and delicious, and kids will love the orange color. You can also mix things up by using applesauce, mashed bananas, or other puréed fruits or veggies in place of the carrots.

Alias Reader (aliasreader) | 29883 comments Here is another interesting breakfast idea

Quinoa Bowl

For healthy eating with a twist, swap your child's usual hot cereal with a steaming bowl of quinoa, a whole grain that also packs plenty of protein to help keep energy levels high and prevent a sugar crash mid-morning. Boil 3 cups of milk — skim, almond, or an alternative — with 1 cup of quinoa. Simmer for 10 minutes, stirring occasionally. Dish it out and top it with fresh raspberries, blueberries, 1 teaspoon each of cinnamon and brown sugar, and 1/2 teaspoon coconut oil. It's a colorful, sweet treat that may help keep kids focused all day long.

Madrano (madran) | 3137 comments I haven't tried that particular pancake recipe but it sounds healthy. Our Daily Bread by Stella Standard. It was my baking bible when I first learn to cook. In some ways she was ahead of her time in combining grains. However she almost always had a bit of some flour in her offerings. Good book.

Carol (goodreadscomcarolann) | 686 comments I will have to try them after I grocery shop. Lately I've been living on ALL kinds of fruit.

message 268: by Alias Reader (new)

Alias Reader (aliasreader) | 29883 comments I love summer fruit, too, Carol !

I usually never get a good watermelon. Well, this year I got one that was awesome. In fact, since it is about 1 million degrees in my apartment, I think I will have some right now! :)

Carol (goodreadscomcarolann) | 686 comments Believe it or not, as I just typed it - I just finished a container of watermelon.

I am completely devoted to PriceChopper's version "Central Market" of Tomato Bruschetta -- amazingly perfect!! I love tomatoes-- blame it on my upbringing! Has anyone here grown up on a sandwich of sliced tomatoes layered on white bread with a little mayonnaise?

====================

Yes ! Also a little S&P on that tomato sandwich please.

Though sometimes it's hard to find tasty tomatoes.
I think next time I pass the Farmers Market I'll spring for one of their expensive tomatoes.

I also love bruschetta. You are talking to a carb nut here. So I love my bread. I buy the Barilla pesto in a jar and put that on toasted sliced Italian bread.

Though sometimes it's hard to find tasty tomatoes. I've found of late the grape tomatoes have no taste.

Tomatoes here are PERFECT! The grocery stores carry local farmers and I live near two farmers who not only have delicious tomatoes but also delicious CORN!!

Ina Garten's Fresh Corn Salad -- http://www.foodnetwork.com/recipes/in...

I live on this salad until the end of August. I'm currently eating black cherries -- so sweet!!

That recipe looks great. I love corn. I think I would sub the vinegar for lemon. I love lemon on corn.

Carol (goodreadscomcarolann) | 686 comments I will make the delicious pancakes and quinoa for the next two mornings. I usually eat Raisin Bran but it is very high regarding sugar --210 mg! It's the "bran" that I need but the sugar is addicting!

The Talenti web site is cool. Just click on the flavor for the nutritional info. I think I purchased chocolate or something like that. It was not fat free.

The other day I thought I would try the So Delicious brand as it is dairy free, even though the price was crazy high. $5 for a pint and that was on sale.

I got the Chocolate So Delicious made with almond milk. Not a fan of the consistency.

I also tried the So delicious coconut milk mocha almond fudge. It was better but not great. Also too much sat fat for me.

This is the kind of tomato we eat. I'm not a fan of grape tomatoes. Sometimes cherry tomatoes if it's in a salad.

Looks like the "vine-ripened" ones I usually buy. I will eat grape tomatoes too though. Grape and cherry are my second fav.

Thursday is the farmers market day, so I am definitely going to pick up some tomatoes ! Though I doubt they will be as good as the ones you recall, Barbara.

message 285: by Madrano (new)

Madrano (madran) | 3137 comments While I miss the abundance of DH's gardens, it's the tomatoes i ache to taste. The last time he had superb tomatoes was in early 2000s. Maryland & Texas gardening efforts didn't yield those sun-kissed tomatoes he grew. *sigh*

message 286: by Alias Reader (new)

Alias Reader (aliasreader) | 29883 comments Well, I picked up the farmers market tomatoes on my way to the gym. It cost $4 for 3 tomatoes.

I'm eating one now as part of my dinner.

Chopped tomato, red onion, mozzarella cheese cubed. Delicious !

The rest of the dinner is leftovers.
Sautéed spinach
Sautéed red potatoes and onion.

message 287: by Julie (new)

Julie (readerjules) | 945 comments I bought some garlic and herb cheese at the farmer's market last time I went. I discovered it goes well with tomatoes! In fact, that is how I have been eating most of it. I usually eat cheese alone as a snack but this is so garlicky that it needs company.

message 288: by Madrano (new)
