I had a request for stewed potatoes last night and went searching for a fast and easy recipe. I found "Hearty Stew" in The Vegan Table: 200 Unforgettable Recipes for Entertaining Every Guest at Every Occasion and was very happy with the fast results. The stew only took about 30 minutes to cook. I added sweet potatoes for a bit of sweetness to balance out the tempeh. This dish is nicely seasoned with thyme and marjoram. A great fall dish and has the added bonus of no added fat.

I was just checking Cookbooker to see what else I've made from this book and it seems I've only made one other recipe which is the Pad Thai. I loved it but it doesn't taste anything like the Pad Thai I've eaten in Thai restaurants. It's more of a sweet and spicy peanut sauce.

Based on your recommendation, I may try the scalloped potatoes for our pot-luck tomorrow night. I'm also making vegan pizza but I forgot that a few gluten sensitive people are attending so now I may make another dish.

Oh wait, it seems I've also made the Aloo Gobi. From my notes it seems I made a few alterations, increasing the cooking time and meddling with a few of the seasonings. I did like it though.
